Found this great Vegan Mayonnaise recipe on Treehugger.com which you might like to try.
Silken Tofu will be available in the shop soon. If there is enough demand for it, I will drop it onto the website too. It has a long shelf-life when un-opened, and will last a week in the fridge once opened (suspend in fresh water in a sealed container).
Here’s the recipe:
4oz silken tofu
2tsp lemon juice
2tsp Dijon mustard
240mls organic vegetable oil (Suma sunflower is good, you could mix with a little Zaytoun organic fairtade olive oil for a richer taste)
Himalayan pink salt and a little black pepper if required to taste
Combine all the ingredients without the oil in a blender for 30 seconds until smooth.
Slowly add the oil until it thickens
Add salt and pinch of pepper, mix and adjust seasoning to taste
