Vegan Mayonnaise recipe

Found this great Vegan Mayonnaise recipe on Treehugger.com which you might like to try.
Silken Tofu will be available in the shop soon. If there is enough demand for it, I will drop it onto the website too. It has a long shelf-life when un-opened, and will last a week in the fridge once opened (suspend in fresh water in a sealed container).

Here’s the recipe:

VEGAN MAYO
Ingredients

4oz silken tofu
2tsp lemon juice
2tsp Dijon mustard
240mls organic vegetable oil (Suma sunflower is good, you could mix with a little Zaytoun organic fairtade olive oil for a richer taste)
Himalayan pink salt and a little black pepper if required to taste

Method

Combine all the ingredients without the oil in a blender for 30 seconds until smooth.
Slowly add the oil until it thickens
Add salt and pinch of pepper, mix and adjust seasoning to taste

I made adapted this recipe using organic cider vinegar, and a teaspoon of toasted sesame oil and added a sprinkling of herbs. It is an exceptional substitute for regular mayonnaise.
