Why coconut palm sugar?
It’s made from the nectar of the coconut blossom, which doesn’t harm the tree at all, so there is no real impact on the tree. It just means a coconut will not grow where the blossom was cut. It has a low GI (glycemic index) 35, compared with refined sugar (68) or even agave (40). It has a delicious caramel flavour. This tasty, unrefined, organic sugar is created by slowly being heated over log fires and because it can only be processed in palm tree habitats, rather than in large factories, it supports local farmers and their communities.
