Homemade coleslaw

I love easy recipes and this is one of my favourites.

It is so simple I thought I would share it with you, especially with warm sunny days on the horizon. What could be better than a big dollop of crunchy coleslaw with your salad or barbecue?
You can make it with your own mayonnaise, bought mayonnaise, or vegan mayo (there is a recipe on this website, just type mayo into the search box and it should pop up.)

Ingredients

2 generous handfuls of finely sliced cabbage
(Red or white the choice is yours)
1 onion finely chopped
(Red or white, as you wish)
2 carrots – grated
2 tablespoons of apple cider vinegar, or white wine vinegar
3 heaped tablespoons of mayonnaise

Method

Mix all the ingredients together in a large bowl until all the veg is coated in mayonnaise.
Can be eaten straight away, or will keep for several days in the fridge if kept in a bowl with a tight fitting lid.
